Cherry is a mild, sweet hardwood with a reputation for both good looks and flavor. It produces a deep mahogany bark and a more pronounced smoke ring than most other woods, making it a go-to for competition pitmasters.
Flavor and smoke
- Flavor: Mild and sweet, with fruity and light vanilla undertones.
- Intensity: Mild, lighter than Post Oak, much lighter than Hickory. Forgiving by nature; difficult to over-smoke with.
Great with: Pork and poultry are the natural fit: ribs, pulled pork, chicken, turkey. Also works well with fish and vegetables. Blends well with Post Oak or Hickory when cooking beef.
Choosing a bag size
- Small (~5–8 lbs) - great for one to two cooks using charcoal cookers like kamados, bullets, and kettles, where wood is used for smoke rather than fuel.
- Medium (~10–13 lbs) - solid if you want a few sessions out of a charcoal cooker, or a few extra pieces to top up for an offset cook.
- Large (~40–50 lbs) - for frequent cooks, long cooks in a wood-fired smoker, or stocking up.
Choosing a split length
No matter which split length you choose, you're getting the same amount of wood in each bag size - shorter splits just means more pieces.
- Short (4") - chunk-sized pieces great for bullet smokers, kamado cookers, and kettle grills.
- Medium (8") - well-suited for smaller offset smokers and larger charcoal setups. Burns longer than the short chunks and fits a wide range of cookers.
- Long (16") - ideal for offset smokers and stickburners where wood is the primary fuel source. Burns longest and produces the deepest coal bed.
Quality
We take quality seriously. Wood, on the other hand, has a nature of its own, and we love it for that. But just to make sure it's not getting too carried away, we test 2–3 random samples for moisture content in every bag before it's packaged and include the results with your order. During processing, each piece is also inspected and any that don't measure up get pulled.
A quick heads up
Split lengths and bag weights are approximate. Unfortunately, wood didn't get the memo on consistency and nature has its own rules, so you'll see some variation as densities, moisture content, and other variables differ. That's just part of the deal with a natural product.
A note on shipping: We ship to most of the U.S., but a few states are temporarily off the menu. Due to state-level wood importation regulations,we're currently unable to ship to AK, CT, FL, HI, ME, NJ, NY, OR, or PA. It's not personal.
